How many grams of yeast are in a teaspoon?
One level teaspoon of active dry yeast weighs about 3.1 grams, and one level teaspoon of instant yeast weighs about 3.3 grams. To convert grams of yeast to teaspoons, divide the weight by that figure. A standard 7 g sachet is therefore 2¼ teaspoons of active dry yeast or 2.121 teaspoons of instant.
The two differ twice over, in opposite directions. Instant yeast is milled finer, so it packs denser and a teaspoon weighs slightly more. It is also roughly a quarter more potent gram for gram, which is why substitution guidance says to use a little less.
Yeast is the least forgiving measurement in baking. Quantities are small enough that a heaped spoon instead of a level one is a large proportional error, and the result — dough that over-proves and collapses, or never rises — shows up hours later. Below 5 g, weigh it.

Yeast is sold by weight and used by volume, which is why this conversion comes up in nearly every bread recipe. The method is one division: grams ÷ grams-per-teaspoon = teaspoons. Going the other way, multiply instead.
The two dry yeasts differ because of how finely they are milled. Active dry yeast has larger, coarser granules that leave more air between them, so a teaspoon holds 3.1 g. Instant yeast is milled finer, packs marginally denser, and comes to 3.3 g per teaspoon — about 6% more. That is a genuine difference, but it is the smaller of the two differences between these yeasts.

The distinction that matters
Active dry vs. instant yeast
Two different differences, and most guides only mention one of them.
These two yeasts differ in weight per teaspoon and in leavening power, and the two are independent. Conflating them is the most common yeast-conversion mistake.
By weight: a teaspoon of instant yeast holds 3.3 g against 3.1 g for active dry — about 6% more, purely because the granules are finer and pack tighter. This is the difference this calculator handles when you switch yeast type.
By strength: instant yeast contains more live cells per gram and does not need proofing in warm water first. Bakers typically use about 25% less instant yeast by weight to get the same rise. That is a recipe decision, not a unit conversion — this calculator does not apply it for you, because whether you want the same rise or the same dose depends on what you are making.
Same recipe, swapping instant for active dry: convert the weight first, then reduce by about a quarter. A recipe calling for 3.1 g of active dry becomes roughly 2.3 g of instant.
Active dry needs proofing; instant does not. Active dry is traditionally dissolved in warm water (about 40°C) for 5-10 minutes first. Instant can go straight into the dry ingredients.
Rapid-rise, quick-rise and bread-machine yeast are all instant yeast. The naming is marketing rather than a product difference — use the 3.3 g per teaspoon figure for all of them.
Fresh (compressed) yeast is a third case. It is roughly 70% water, so you need about three times the weight: 1 teaspoon of active dry (3.1 g) replaces about 9 g of fresh yeast.

Accuracy & assumptions
What these numbers assume
All yeast values assume level teaspoons of loose, free-flowing granules straight from a sachet or jar. Yeast settles and compacts in storage, so a teaspoon scooped from the bottom of a long-opened jar can weigh noticeably more than one taken from a fresh sachet. If your recipe is at all sensitive, weigh it.
The 3.1 g and 3.3 g figures are culinary reference averages across major brands. Individual brands vary by a few percent in granule size, and that variation is larger than the difference between one brand’s active dry and another’s. For everyday baking that is well within tolerance; for sourdough schedules and long fermentations where dose drives timing, a 0.1 g scale is the right tool.
These values describe weight, not strength. Instant yeast is roughly 25% more active than active dry at the same weight, so substituting one for the other means adjusting the quantity as well as re-running the conversion.
